Ingredients:

🔹 1 Mukeke fresh from Lake Tanganyika
🔹 2 tomatoes ripe
🔹 1 onion medium
🔹 2 garlic cloves
🔹 1 lemon
🔹 1 teaspoon of salt
🔹 1 cup peanut oil
🔹 1/2 liter ofwater
🔹 1 red pepper (optional)
🔹 1 sheet of laurel (optional)

Mukeke preparation :

1. Preparing and cleaning fish

  • Scaling the Mukeke with a knife and wash well.
  • Open the fish and remove entrailsrinse several times with clean water.
  • Rub fish with lemon juice and a little salt to remove the strong smell.
  • Do slight incisions on the skin to allow the oil to penetrate.

2. Seasoning and cooking

  • Crush garliccut theonion into thin slices and chop the tomatoes.
  • In a pot or large saucepan, heat oil and put the mukeke to fry

  • Check that the fish flesh is tender and soaked in the sauce.
  • Serve hot with rice, fried plantains, potato chips or bugari or Uburobe.
  • Sprinkle lightly with a little lemon juice before serving (optional)
